Is there a real Chicken Soup for the Infertile's Soul? Slow Cooker Size 3.5L+

Cooking time:

A soup that is full of substance, try and see for yourself!

Ingredients

  • 5 cups chicken stock
  • 14 oz (400g) boneless, skinless chicken thighs
  • 2 teaspoons lemon juice
  • 2 tablespoons tomato chutney
  • 1 tablespoon mild Indian curry paste
  • 3 cups basmati rice
  • teaspoon ground turmeric
  • 2 tablespoons coriander leaves
  • 1 onion chopped finely
  • 1 carrot diced
  • 1 all purpose potato diced
  • 1 celery stalk, diced

Steps:

  • Trim the fat off the chicken. Cut into small cubes.
  • Place the curry paste, turmeric, tomato chutney and lemon juice in the slow cooker.
  • Stir in some stock.
  • Add the onion, celery, carrot, potato, chicken and rice.
  • Add the remaining stock.
  • Cook for 3-4 hours on High.
  • Add salt and pepper to taste.
  • Pour the soup into serving bowls.
  • Garnish with coriander and serve.
  • Recipe End
