  • 400 g (14 oz) can of chopped tomatoes
  • 4 skinless, boneless chicken breasts
  • 3 garlic cloves, finely chopped
  • 1 tablespoon vegetable oil
  • 1 red onion (small), sliced into rings
  • 1 onion (medium) finely chopped
  • 1 teaspoon chipotle paste
  • coriander leaves
  • teaspoon dark brown sugar
  • rice or corn tortillas to serve


  1. In a medium size saucepan heat the oil and cook the onion and garlic for about 5 minutes.
  2. Transfer into a slow cooker.
  3. Add chipotle, sugar, tomatoes and chicken.
  4. Cover and cook for 2 hours over high heat.
  5. Take the chicken off the slow cooker.
  6. Shred the meat using forks.
  7. Serve with rice or corn tortillas.
