Mapple-Glazed Ribs

Ingredients:
- Around 1 litre (32floz) of boiling water
- 1.25 kg (2lb) of pork ribs (rinsed and drained with cold water)
- 1 teaspoon black peppercorns
- 1 onion, quartered
- 2 tablespoons malt vinegar
- 1 carrot, sliced thickly
- 2 bay leaves
Glaze:
- 125 ml (4fl oz) maple syrup
- 2 teaspoons English mustard
- 1 teaspoon ground all spice
- 2 tablespoons tomato puree
Coleslaw
- 100 g (3oz) sweetcorn
- 2 grated carrots
- ¼ red cabbage, shredded
- 2 tablespoons mayonnaise
- 2 tablespoons natural yogurt
Steps:
- Preheat the cooker as per instruction from the manufacturer.
- Place the pork, carrot, onion, vinegar, bay leaves, peppercorns,
salt and water into the slow cooker pot.
- Cover with a lid and cook over high heat for 5 to 7 hours.
- Lift the ribs out from the slow cooker using a slotted spoon and
place to a foil-lined grill pan.
- Mix the ingredients together for the glaze, add 150 ml of hot
stock from the slow cooker pot.
- Put the mixture using a spoon over the ribs and grill them for
10 to 15 minutes until browned and sticky on all sides.
- While waiting, mix the ingredients for the coleslaw and place
into 4 small bowls.
- Put these on dinner plates then pile on the plates to serve.
For beery pork with rosemary dumplings:
For Chinese ribs, cook the pork ribs in the slow cooker as per
instruction above. Drain the ribs and place them on a foil-lined grill
pan seasoned with a mixture of 2 tablespoons soy sauce, 4 tablespoons
hoisin sauce, 2 tablespoons tomato puree, 2 tablespoons light muscovado
sugar, juice of 1 orange and 150 ml (5fl oz) stock from the slow cooker pot.
Grill the ribs for 10 to 15 minutes as per instruction above.
