Ginger-Citrus Salmon Steaks

Salmon is one of those dishes that provides valuable omega-3 fatty
acids, so it’s good to include in your diet. This recipe is simple and
very tasty. Add a side of vegetables and fresh bread, and you have a
lovely dinner. If you’re serving wine, try a Pinot Noir, Chardonnay, or
a nice red burgundy.
Ingredients:
- Non-stick cooking spray
- 4 170g (6 oz) salmon steaks or, rinsed and blotted dry
- ½ cup water
- ½ cup orange juice
- 1 5cm (2 inches) piece fresh ginger root, grated
- 1 lemon, thinly sliced
- 1 lime, thinly sliced
- 1 tablespoon extra virgin olive oil
- Salt and pepper, to taste
- Fresh cilantro and lemon wedges for garnish
Steps:
- Spray slow cooker with a non-stick spray and arrange salmon
tightly along bottom of cooker.
- In a saucepan, combine water, orange juice, pepper, and ginger.
Bring to a boil over medium to high heat. Pour evenly around fish in
slow cooker.
- Arrange lemon and lime slices over fish. Drizzle with olive
oil then add salt and pepper to taste.
- Cover and cook on High setting for 1.5 to 2 hours, until salmon
is firm to touch and opaque.
- Garnish salmon with cilantro and lemon wedges.
