Cooking time: 8-10 hours on High or 4-5 hours on Low setting


  • 1 tablespoon cooking oil
  • 1 cups onion, chopped
  • 60-85g Skinless chicken thighs (boneless)
  • 540g (19 oz) chickpeas (rinsed and drained)
  • 4 garlic cloves, minced
  • teaspoon ground cinnamon
  • teaspoon ground cumin
  • 800g (28 oz) diced tomatoes (with juice)
  • teaspoon salt
  • 1 teaspoon oregano, dried
  • 2 tablespoons Instant potato flakes
  • 2 cups fresh spinach without stems and packed lightly
  • teaspoon grated lemon zest


  1. Heat oil in a skillet or a large frying pan over medium heat.
  2. Add the chicken and cook for 8 to 10 minutes until brown on all sides.
  3. Place the chicken on a large plate then cover to keep warm.
  4. In the same frying pan, add onion, cinnamon, ground cumin and garlic cloves. Heat and stir for about 1 minute until fragrant.
  5. Spread in the bottom of a 4 to 5L size slow cooker and place the chicken on the top.
  6. Combine chickpeas, diced tomatoes, oregano and salt in a large bowl and pour over chicken. No need to stir.
  7. Cover and cook for 8 to 9 hours over low heat or 4 to 5 hours over high heat.
  8. Add potato flakes, spinach and lemon zest. Stir gently. Cover and heat over high heat for 1 to 2 minutes until spinach is wilted.
  9. Serve immediately.
