  • 1 tablespoon cooking oil
  • 1 cups chopped onions
  • 0.18 lb (85 g) Skinless chicken thighs (boneless)
  • 19 oz (550g) chickpeas (rinsed and drained)
  • 4 garlic cloves minced
  • teaspoon ground cinnamon
  • teaspoon ground cummin
  • 28oz (800g) diced tomatoes (with juice)
  • teaspoon salt
  • 1 teaspoon dried oregano
  • 2 tablespoons instant potato flakes
  • 2 cups fresh spinach without stems and packed lightly
  • teaspoon grated lemon zest


  • Heat oil in a skillet or a large frying pan over medium heat.
  • Add the chicken and cook for 8 to 10 minutes until brown on all sides.
  • Place the chicken on a large plate then cover to keep warm.
  • In the same frying pan, add onion, cinnamon, ground cumin and garlic cloves. Heat and stir for about 1 minute until fragrant.
  • Spread in the bottom of a 4 to 5L size slow cooker and place the chicken on the top.
  • Combine chickpeas, diced tomatoes, oregano and salt in a large bowl and pour over chicken. No need to stir.
  • Cover and cook for 8 to 9 hours over low heat or 4 to 5 hours over high heat.
  • Add potato flakes, spinach and lemon zest. Stir gently. Cover and heat over high heat for 1 to 2 minutes until spinach is wilted.
  • Serve immediately.
