It's not just an ordinary soup, its something special. With noodles
and chicken, I'm sure everything is t it's best.
850 ml (28 fl oz)
11 oz (300g)
baby bok choy
seeded and chopped finely
5 oz (150g)
dried rice vermicelli noodles
grated fresh ginger
9 oz (250g)
boneless, skinless chicken breasts
Indian curry powder
Put the ginger, coconut milk, chilli, curry powder and stock in
the slow cooker.
Cook for 1 ½ hours on High.
Meanwhile put the vermicelli in the heatproof bowl.
Add boiling water and soak the vermicelli for 10 minutes then
Separate the bok choy leaves and slice the large leaves into
Trim the meat off the chicken, discard any fat and cut into thin
Place the bok choy, chicken and vermicelli into slow cooker.
Cook for another 20 minutes until chicken is fully cooked.
Add the basil and serve.
