It's not just an ordinary soup, its something special. With noodles and chicken, I'm sure everything is t it's best.


  • 850 ml (28 fl oz) tinned coconut milk
  • 11 oz (300g) baby bok choy
  • 3 cups chicken stock
  • 1 red chilli seeded and chopped finely
  • 5 oz (150g) dried rice vermicelli noodles
  • 1 tablespoon grated fresh ginger chopped finely
  • 2 x 9 oz (250g) boneless, skinless chicken breasts
  • 2 tablespoons Indian curry powder
  • 4 tablespoons torn basil


  • Put the ginger, coconut milk, chilli, curry powder and stock in the slow cooker.
  • Cook for 1 hours on High.
  • Meanwhile put the vermicelli in the heatproof bowl.
  • Add boiling water and soak the vermicelli for 10 minutes then drain.
  • Separate the bok choy leaves and slice the large leaves into half.
  • Trim the meat off the chicken, discard any fat and cut into thin slices.
  • Place the bok choy, chicken and vermicelli into slow cooker.
  • Cook for another 20 minutes until chicken is fully cooked.
  • Add the basil and serve.
