Creamy Potato Soup Recipe

Preparation time: 5-10 minutes
Cooking time: Low 8-10 hours
Serves 4 to 6
Ingredients:
- 6 medium potatoes, peeled, cubed
- 1 onion, minced
- 2 x 400g (14oz) cans chicken liquid stock or
homemade chicken stock
- 230g (8oz) package shredded cheddar cheese
- 1 cup unthickened cream
Steps:
- In slow cooker, combine potatoes, onion, chicken stock and ½
teaspoon (2 ml) pepper.
- Cover and cook on LOW for 8 to 10 hours.
- With potato masher, mash potatoes in slow cooker.
- About 1 hour before serving, stir in cheese and cream and cook 1
additional hour.
- Serves 4 to 6.
TIP: If don't like black specks in your soup, use white pepper.
