It's not just a typical soup, it's a creamy soup with chicken and corn. A special soup to share with family and friends.


  • 19 oz (550g) chicken thighs trimmed
  • 4 corn cobs
  • 4 cups chicken stock
  • 1 leek chopped (white part only)
  • 2 garlic cloves chopped
  • 1 celery stalk, chopped
  • 1 large floury potato (russet) cut into 1 cm ( inch) dice
  • teaspoon thyme
  • 1 bay leaf
  • ⅓ cup pouring cream
  • cup sherry
  • snipped chives to garnish


  • Take the corn kernels from the cobs using a knife.
  • Place the garlic, chicken, celery, leek, thyme, bay leaf, sherry, stock and potato in the slow cooker.
  • Cook for 2 hours on High.
  • Take the chicken off the slow cooker and place into a platter. Allow to cool.
  • Discard the bay leaf.
  • Using a hand-held stick blender, beat the soup until smooth.
  • Shred the chicken and bring back to the slow cooker.
  • Pour in the cream.
  • Cook for another 10-15 minutes.
  • Garnish with chives and serve.
