Cream of courgette Soup

Preparation time: 10 minutes
Cooking time: Low 2 hours
Serves 4
Ingredients:
- 1 small onion, minced
- 3½ - 4 cups grated courgette with peel
- 2 x 400g (14oz) cans chicken liquid stock or
homemade chicken stock
- 1 teaspoon seasoned salt
- 1 teaspoon dried dill
- ½ teaspoon white pepper
- 2 tablespoons butter, melted
- 225g (8oz) carton sour cream
Steps:
- In sprayed, small slow cooker, combine all ingredients except
sour cream.
- Cover and cook on LOW for 2 hours.
- Fold in sour cream and continue cooking for about 10 minutes or
just until soup is hot. Serves 4.
