Slow Cooker Coconut and Green Curry Pork

Preparation time: 15 minutes
Slow Cooker Size 3.5L+
Serves: 6 - 8
Cooking time: 6 - 8 hours on  Low setting

Ingredients:

  • 1 kg (2 lbs) butt or shoulder of pork
  • 1 kg (2 lbs) red potatoes, peeled and cubed
  • 1 can of Thai green curry paste
  • 1 tablespoon vegetable oil
  • Kosher salt
  • 1 can of coconut milk
  • Freshly-ground black pepper
  • chopped cilantro to garnish (optional)

Steps:

  1. Halved the pork and divide the half into two to make it four.
  2. Sprinkle with pepper and salt then place in a baking pan.
  3. In a pre-heated broiler, place the pan with the pork and broil for 15 - 20 minutes until browned on all sides.
  4. In a slow cooker, arrange the cut potatoes at the bottom and sprinkle with pepper and salt.
  5. Meanwhile, in a large skillet with vegetable oil, fry the curry paste for 3 - 5 minutes over medium heat.
  6. Pour in the coconut milk and cook for few minutes more.
  7. Take the pork off the broiler and drain.
  8. Place the pork in the slow cooker with potatoes.
  9. Pour in the  coconut milk mixture and green curry.
  10. Cover and cook for 6 to 8 hours over low heat until pork is tender.
  11. Add soy sauce and salt to taste.
  12. Garnish with chopped cilantro and serve.
