Rich Chocolate Cake with Pecan Topping

If you’re slimming, you should probably stop reading right now. This
slow cooker cake is super easy and extremely rich and decadent. Serve it
to guests and you will be the reigning dessert queen (or king).
Ingredients:
- 1 500g (18oz) packet German chocolate cake mix
- 1 120g (4oz) packet chocolate instant pudding mix
- 1 120g (4oz) package chocolate cook-and-serve pudding mix
- 3 large eggs, lightly beaten
- cup sour cream
- ⅓ cup melted butter
- teaspoon vanilla extract
- 3 ¼ cups milk, divided
- ½ cup chopped pecans
- 1 ½ cups miniature marshmallows
- cup semisweet chocolate morsels
- Nonstick cooking spray
Steps:
- Blend cake mix, instant pudding mix, eggs, sour cream, melted
butter, vanilla extract, and 1¼ cups of the milk with an electric
mixer for two minutes. Scrape batter off sides of bowl as needed.
- Spray slow cooker with nonstick cooking spray. Pour batter into
slow cooker.
- Scald remaining 2 cups of milk in a heavy saucepan over medium
heat. Do not boil. Remove from heat.
- Sprinkle the cook and serve pudding mix over the batter and
slowly pour the hot milk over it.
- Cover and cook for 3 hours, 40 minutes on Low setting.
- During the last few minutes of cooking, toast pecans in a small
skillet over medium-low heat until aromatic. It should take about 4
or 5 minutes, and you should stir the pecans often.
- Turn off slow cooker and sprinkle cake with toasted pecans, mini
marshmallows, and chocolate morsels. Let stand 15 minutes.
Marshmallows will appear slightly melted when ready.
