Ive just bought a slow cooker so this was my first reciepe i had tryed. The dish was very nice, but to bland for me but then it was chicken chow mein, i served this with rice. I would suggest not to put to much cornflour in as it does make it a bit to thick. On the whole a good start so im looking for some more receipes, cant wait to do the next dish.

Slow Cooker Chicken Chow Mein

Cooking time: 9 hours on LOW setting plus 20 minutes on HIGH setting

Here’s an easy classic that’s healthy. Serve with a side of rice or chow mein noodles and you have a filling meal that everyone loves.

Ingredients:

  • 1 tablespoon cooking oil
  • 700g (about 1½ pounds) boneless skinless chicken breasts, cut into 2.5cm (1") pieces
  • 4 carrots, sliced
  • 4 green onions, sliced
  • 3 stalks celery, sliced
  • 1 cup chicken broth
  • 1 tablespoon granulated sugar
  • 1/3 cup light soy sauce
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon ground ginger
  • 1 clove garlic, crushed
  • 230g (8oz) bean sprouts
  • 230g (8oz) water chestnuts, sliced
  • ¼ cup cornstarch
  • ½ cup water

Steps:

  1. Brown the chicken in a skillet in the cooking oil.
  2. Put chicken and all ingredients except for cornstarch and water into the slow cooker and stir.
  3. Cook on Low setting for 8 to 10 hours.
  4. Turn Slow Cooker to High setting and combine cornstarch and cold water in small bowl until dissolved.
  5. Stir cornstarch and water mixture into slow cooker liquids. Cover with top slightly ajar so a bit of steam can escape. Cook on High until thickened (about 20 minutes).
