Served with asparagus or broccoli and toasted garlic bread, this simple dish brings a hint of Italy to your kitchen. A side of sautéed mushrooms is also delicious with this dish. If you’re having wine with dinner, try a Riesling, or an Australian Zweigelt.

Ingredients:

  • 7 cups hot water
  • 2 cups polenta (Use the slow cooking kind, not quick-cooking.)
  • 2 tablespoon extra virgin olive oil
  • 2 teaspoon salt
  • ½ teaspoon ground pepper
  • 3 cups shredded sharp cheddar cheese

Steps

  1. In slow cooker, mix together water, polenta, olive oil, salt, and pepper until blended.
  2. Stir in cheese.
  3. Cover and cook on High setting for 2 hours, or until most of the liquid is absorbed.
  4. Stir well. When it’s done, it should have a consistency similar to thick cooked cereal.
