Captivating Slow Cooker Carrot Cake

Carrot cake is so delicious – well worth the effort of grating the
carrots. You can serve this slow cooker version with whipped cream, or
with cream cheese frosting. There are now some excellent pre-packaged
cream cheese frostings available at the supermarket. If your children
haven’t tried carrot cake, they won’t believe they’re eating carrots!
Ingredients:
- 1 cup sugar
- 2 eggs
- ¼ cup water
- ⅓ cup vegetable oil
- 1 ½ cups flour
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup grated carrots
- Whipped topping
Steps:
- If starting with whole carrots, peel and grate them until you
have 1 cupful.
- Using a large mixing bowl, cream together sugar, eggs, water,
and oil.
- Mix in flour, vanilla, baking powder, baking soda, and cinnamon.
Only blend until everything is combined.
- Use a spoon to stir in the grated carrots until evenly
distributed.
- Spray inside of slow cooker with non-stick cooking spray.
- Pour in batter and spread it evenly in the slow cooker.
- Place a thickness of 4 or 5 paper towels across the top of the
slow cooker and place slow cooker lid on top of the paper towels.
- Cook on Low setting for 2 hours and 15 minutes, or until
toothpick inserted in center comes out clean.
- Serve with whipped cream when cool.
