Carrot cake is so delicious – well worth the effort of grating the
carrots. You can serve this slow cooker version with whipped cream, or
with cream cheese frosting. There are now some excellent pre-packaged
cream cheese frostings available at the supermarket. If your children
haven’t tried carrot cake, they won’t believe they’re eating carrots!
⅓ cupvegetable oil
1 ½ cupsflour
1 teaspoonbaking powder
½ teaspoonbaking soda
1 cupgrated carrots
If starting with whole carrots, peel and grate them until you
have 1 cupful.
Using a large mixing bowl, cream together sugar, eggs, water,
Mix in flour, vanilla, baking powder, baking soda, and cinnamon.
Only blend until everything is combined.
Use a spoon to stir in the grated carrots until evenly
Spray inside of slow cooker with non-stick cooking spray.
Pour in batter and spread it evenly in the slow cooker.
Place a thickness of 4 or 5 paper towels across the top of the
slow cooker and place slow cooker lid on top of the paper towels.
Cook on Low setting for 2 hours and 15 minutes, or until
toothpick inserted in center comes out clean.
