Whether it is for a dinner or for a breakfast, this soup recipe is really satisfying.


  • 10 cups chicken stock
  • 2 boneless, skinless chicken breasts
  • 3 garlic cloves
  • 2 tablespoons lemon juice
  • 3 celery stalk, chopped finely
  • 1 carrot cubed
  • 1 cup long-grain rice
  • 1 mint sprig
  • 1 onion cut into thin wedges
  • 1 teaspoon grated lemon zest
  • 2 tablespoons shredded mint (to garnish)


  • Score a cross in the bottom part of each tomato.
  • Place the tomatoes in a heatproof bowl.
  • Cover the tomatoes with boiling water and soak for 30 seconds.
  • Transfer the tomatoes into a bowl with cold water.
  • Peel the skin off and cut into half. Scoop the seeds and chop the flesh.
  • Place the onion, tomatoes, carrot, celery, stock, mint, lemon zest and rice in the slow cooker.
  • Cook for 3 hours on High until rice is cooked.
  • Meanwhile, trim the fat off the chicken.
  • Cut the chicken into thin slices.
  • Place the chicken in the slow cooker.
  • Pour in the lemon juice and stir.
  • Add salt and pepper to taste.
  • Garnish with shredded mint.
  • Serve.
