Bountiful Breakfast or Brunch Casserole

This can be made overnight for breakfast or brunch, but it also makes a
wonderful supper. Serve with a side of fruit and orange or grapefruit
juice. For fancy occasions, serve with Mimosas or champagne.
Ingredients:
- 1 x 900g (32 oz) bag frozen hash brown potatoes
- 450g (1 lb) of bacon diced, cooked and drained or 900g cooked
ham, cubed
- 1 medium onion, diced
- 1 green bell pepper, diced
- 1 ½ cup. shredded cheddar or Monterey Jack cheese
- 12 eggs
- 1 cup milk
- 1 teaspoon salt
- 1 teaspoon pepper
Steps:
- Place a layer of hash brown potatoes on bottom of slow cooker.
Add a layer of bacon, then onions, green pepper, and cheese. Repeat
layers two to three more times (depending on the circumference of
your slow cooker), ending up with a top layer of cheese.
- In a mixing bowl, beat together eggs, milk, salt, and pepper.
Pour over mixture in slow cooker.
- Cover and cook on Low setting 10 to 12 hours.
