Slow Cooker Size
This can be made overnight for breakfast or brunch, but it also makes a
wonderful supper. Serve with a side of fruit and orange or grapefruit
juice. For fancy occasions, serve with Mimosas or champagne.
32 oz (900g)
hash brown potatoes
1 lb (500g)bacon
diced, cooked and drained or 900g cooked
1green bell pepper
1 ½ cupsshredded cheddar cheese
or Monterey Jack cheese
Place a layer of hash brown potatoes on bottom of slow cooker.
Add a layer of bacon, then onions, green pepper, and cheese. Repeat
layers two to three more times (depending on the circumference of
your slow cooker), ending up with a top layer of cheese.
In a mixing bowl, beat together eggs, milk, salt, and pepper.
Pour over mixture in slow cooker.
