Slow Cooker Beef Recipes - Old World Beef Stew

For a hearty, one-dish meal, prepare this delicious beef stew filled with old world European flavors and fresh vegetables. Serves 6 people.

Slow Cooker Beef Recipes - Old World Beef Stew

Ingredients:

  • 700g beef chuck meat
  • 2 large carrots
  • 2 onions
  • 2 baking potatoes
  • 1 red sweet pepper
  • 3 cloves garlic (minced)
  • 400ml can low sodium beef broth
  • 170g can tomato paste
  • 1 tablespoon paprika
  • 1 tsp. lemon zest
  • ½ tsp. caraway seeds
  • ¼ tsp black pepper
  • 1 bay leaf
  • ½ tsp thyme

Directions:

  1. Cut carrots, and onions into small pieces.
     
  2. Peel and cut potatoes into one-inch cubes.
     
  3. Cut chuck meat into small cubes.
     
  4. Slice red sweet pepper into thin strips.
     
  5. Combine carrots, onions, potatoes, and beef in the slow cooker.
     
  6. Add in garlic, broth, tomato paste, paprika, lemon zest, caraway seeds, pepper, bay leaf, and thyme.
     
  7. Stir ingredients in slow cooker to mix.
     
  8. Cover and cook on low heat for 8 to 9 hours. (Optional: set cooker to high heat and cook for 4 hours to save time)
     
  9. Once all ingredients are tender, add in pepper strips and continue cooking for thirty minutes.
     
  10. Serve warm and enjoy!

General Slow Cooker Tips

  • One hour on HIGH is equal to two hours on LOW.
  • The LOW setting is about 200 degrees, and the HIGH setting is about 300 degrees. Note that both of these temps are well above the minimum safe temperature of 140 degrees.
  • Only fill the crockpot one half to two thirds full. The foods will not cook properly if the appliance is filled to the brim. If the food and liquid level is lower, the foods will cook too quickly.
  • Foods cooked on the bottom of the slow cooker cook faster and will be moister because they are immersed in the simmering liquid.
  • Don't lift the lid to stir, especially if you are cooking on the low setting. Each time you lift the lid, enough heat will escape that the cooking time should be extended by 20 minutes to half an hour.
